Nyodogawa Distillery — Kochi river

Kochi — Niyodogawa

Nyodogawa Distillery

Kochi Prefecture, Japan

Where mountain forests fold around water so clear it appears blue. Nyodogawa is shaped by mineral-rich soft water, cool mornings and the deep quiet of inland Shikoku — a distillery that prizes precision, lift and the crystalline brightness of its river.

The Niyodo River runs through the heart of Kochi with a clarity so rare it has earned its own name — “Niyodo Blue.” Beside its banks, the Nyodogawa Distillery uses this exceptionally pure water as the foundation of every spirit it produces. Filtered through dense forest, layered stone and centuries of untouched soil, the water arrives at the still house already carrying a sense of place.

Inland Shikoku has cool, mineral-clean air and pronounced shifts between day and night temperatures. This sharpens the spirit, lending it precision and lift. Where coastal Wakayama gives roundness, Nyodogawa gives focus — a quiet, crystalline brightness that holds the centre of the glass and refuses to wander.

The distillery favours single-pass clarity over heavy peating, working with locally malted barley and bourbon-led cask programmes punctuated by Mizunara and red-wine finishes. Long fermentations bring out a delicate orchard-fruit character; tight distillation cuts preserve it. There is little intervention after the cask is filled — the river, the forest and the cool air do the rest.

Clear water makes a clear mind. Everything we do — from milling to bottling — is in service of preserving the river’s quiet brightness. We do not try to add to it. We try, simply, not to dim it.
